Tip: These zucchini patties are about 150-200 calories per serving, depending on portion size. They make a great side dish, snack, or even a light main course. These are delicious when served with a dipping sauce like ranch or marinara!
Ingredients:
2 cups grated zucchini
2 eggs, beaten
1/4 cup chopped onion
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/2 cup shredded Mozzarella cheese
Salt to taste
2 tablespoons vegetable oil (for frying)
Instructions:
Step 1:
In a medium bowl, combine the grated zucchini, beaten eggs, chopped onion, flour, Parmesan cheese, Mozzarella cheese, and a pinch of salt.
Stir the ingredients well until everything is evenly mixed.
Step 2:
Heat the vegetable oil in a skillet over medium-high heat.
Step 3:
Using a heaping tablespoon, drop spoonfuls of the zucchini mixture into the skillet. Flatten each spoonful with a spatula to form patty shapes.
Cook for a few minutes on each side, flipping once golden brown. Continue until all patties are cooked.
Step 4:
Remove the patties from the skillet and drain on a paper towel.
Serve hot with your favorite dipping sauce or on their own!
Notes:
Serving Suggestions: These zucchini patties go wonderfully with a side of yogurt or a simple garden salad.
Healthier Option: If you want to reduce the oil used for frying, you can bake these patties on a parchment-lined baking sheet at 400°F (200°C) for about 15 minutes, flipping halfway through.
