Instructions:

In a large mixing bowl, sift together the cake flour, cocoa powder, sugar, salt, baking powder, and baking soda.
In another bowl, whisk together the eggs, milk, vegetable oil, vanilla extract, and coffee (if using).
Gradually add the wet ingredients to the dry ingredients and mix until smooth.
Add the boiling water and white vinegar to the batter. Mix well—this will make the batter thin, but that's normal.
Pour the batter evenly into the prepared cake pans and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
