Raspberry Swirl Ice Cream Recipe

Ingredients:
2 cups heavy cream
1 cup whole milk
¾ cup granulated sugar
1 teaspoon vanilla extract
1 ½ cups fresh raspberries
2 tablespoons lemon juice
½ cup powdered sugar
Instructions:
In a medium mixing bowl, combine the heavy cream, whole milk, granulated sugar, and vanilla extract. Whisk the ingredients together until the sugar is fully dissolved and the mixture is smooth.
Pour the cream mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes, depending on the machine). Once churned, transfer the ice cream to a container and place it in the freezer to firm up for at least 3-4 hours.
While the ice cream is freezing, prepare the raspberry swirl. In a small saucepan, combine the fresh raspberries, lemon juice, and powdered sugar. Cook over medium heat for 5-7 minutes, mashing the raspberries with a spoon until they break down and release their juices. Once the mixture thickens slightly, remove from heat and let it cool to room temperature.
Once the ice cream has firmed up, gently swirl the raspberry mixture into the ice cream using a spoon or spatula. Be careful not to overmix so that the raspberry swirl remains swirled and not fully incorporated.
Place the ice cream back in the freezer for an additional hour or two to allow the raspberry swirl to set.
Serve the Raspberry Swirl Ice Cream in bowls or cones, and enjoy!
