Taco Bell Copycat Mexican Pizza Casserole

Tip: This casserole has approximately 400-450 calories per serving, depending on portion size. It’s a fun, family-friendly dinner that gives you all the flavor of Taco Bell's Mexican pizza in one delicious casserole. Perfect for a weeknight meal or a casual dinner with friends!

Ingredients:
1.5 lb ground beef

1 Taco Bell seasoning packet

1 large can refried beans

1 large can red enchilada sauce

10 corn flour mix tortillas (fry individually)

1 large tomato, diced

1/4 medium onion, diced

3+ cups shredded cheese

Chopped green onion (for garnish)

Directions:
Cook the Ground Beef:

Brown the ground beef in a skillet, drain excess fat.

Return the beef to the skillet and add the seasoning packet, along with 1/2 to 3/4 cup of water. Simmer until most of the liquid is absorbed. Set aside.

Prepare the Beans:

Heat the refried beans in a pot or microwave.

Fry the Tortillas:

Use a little vegetable oil to fry each tortilla individually until crispy. Drain on paper towels.

Assemble the Casserole:

Layer the bottom of a casserole dish with fried tortillas.

Spread a layer of refried beans across the tortillas.

Add the seasoned meat over the beans.

Pour half of the enchilada sauce over the meat layer.

Add another layer of tortillas, then evenly pour the remaining enchilada sauce over the tortillas.

Sprinkle the diced tomatoes and yellow onion on top, then spread shredded cheese over the top. (You can place the tomatoes and onions on top of or beneath the cheese layer, depending on preference.)

Bake:

Bake at 350°F (175°C) for about 20 minutes, or until the cheese is melted and the edges are bubbling.

Garnish and Serve:

After removing the casserole from the oven, garnish with chopped green onions.

Let stand for 10 minutes before serving.

Notes:
Saving Energy: Since this recipe uses the oven for just 20 minutes, it’s fairly energy-efficient. To save even more energy, you can prepare the casserole ahead of time and refrigerate, then just bake it when ready to serve.
