Ingredients:

Fresh Berries (for garnish)
-
Fresh Rosemary (for garnish)
-
3 large Eggs
-
2 cups All-purpose flour
-
1 tsp Baking soda
-
3/4 cup high-quality Cocoa powder
-
1 cup Granulated sugar
-
Powdered sugar (for dusting)
-
8 oz Premium Swiss dark chocolate
-
1/2 tsp Salt
-
1 tsp Vanilla extract
-
9/16 cup Unsalted butter (approximately 3/4 cup)
-
1 cup Heavy cream
-
1 cup Whole milk
-
3/4 cup Hot water
-
Chocolate shavings and curls (for garnish)
Instructions:
-
Prepare the oven and cake pans:
Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper to prevent sticking. -
Melt the chocolate:
In a heatproof bowl, melt the premium Swiss dark chocolate with the butter over a double boiler or microwave in short bursts, stirring between intervals. Once melted, set aside to cool slightly. -
Mix the dry ingredients:
In a medium-sized bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Sift if needed to ensure smoothness. Set aside. -
Mix the wet ingredients:
In a separate bowl, beat the eggs and granulated sugar together until light and fluffy. Add the vanilla extract and melted chocolate-butter mixture and mix well. -
Combine the wet and dry ingredients:
Gradually fold the dry ingredients into the wet mixture, alternating with the whole milk and hot water. Stir until smooth and fully combined. -
Bake the cake:
Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely. -
Make the frosting:
In a saucepan, heat the heavy cream until it begins to simmer. Pour the hot cream over the remaining melted chocolate and stir until smooth and creamy. -
Assemble the cake:
Once the cakes have cooled, place one layer on a plate and spread a layer of frosting on top. Add the second cake layer and cover the entire cake with the remaining frosting. -
Decorate and serve:
Dust the cake with powdered sugar, then garnish with fresh berries, rosemary, and chocolate shavings and curls for an elegant finish.
