Snow Ball Brownies
Ingredients:
For the Brownie Layer:

1 cup (2 sticks) unsalted butter, melted

1 1/2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 teaspoon salt

1/2 teaspoon baking powder

1 cup semi-sweet chocolate chips (optional)
For the Coconut Coating:

1 1/2 cups sweetened shredded coconut
-
1/4 cup powdered sugar
-
1/2 teaspoon vanilla extract
Instructions:
1. Prepare the Brownie Layer:

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

In a large mixing bowl, combine the melted butter and granulated sugar. Stir until well combined.

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.

Gradually fold the dry ingredients into the wet ingredients, mixing until fully combined. If you’re using chocolate chips, fold them in as well.

Pour the brownie batter into the prepared pan and spread it out evenly with a spatula.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs. The brownies should be soft and fudgy in texture. Let the brownies cool completely in the pan on a wire rack.
2. Prepare the Coconut Coating:

In a medium-sized bowl, combine the shredded coconut, powdered sugar, and vanilla extract. Mix well until the coconut is coated evenly with the powdered sugar.

Once the brownies are completely cool, cut them into squares (approximately 12-16 pieces, depending on your preference).
3. Assemble the Snow Ball Brownies:

Take each brownie square and roll it into a ball (or leave it as a square if you prefer). Roll the brownie ball in the coconut mixture, making sure it's fully covered with coconut on all sides.

Repeat with the remaining brownies.
4. Serve and Enjoy:

Once all the brownies are coated with coconut, serve them as a festive dessert or snack. They make a great treat for holiday parties or any special occasion!
