
Slow Cooker Pepper Steak

Serves: 6
Cooking Time: 6-8 hours
Ingredients:
3 lbs flank steak, cut into 1-inch strips
4 bell peppers, sliced (any combo of colors)
2 onions, sliced
3 tbsp olive oil
2 cloves garlic, minced
1 1⁄2 cups soy sauce
1 1⁄2 cups water
1⁄2 cup cornstarch
1 cup brown sugar
Instructions:
Coat the beef: Place the cornstarch and flank steak strips in a large resealable bag. Seal the bag and shake to coat the beef evenly.
Prepare the slow cooker: In the slow cooker, mix together the olive oil, brown sugar, soy sauce, water, and minced garlic.
Add the beef: Add the coated steak strips to the slow cooker and stir to coat evenly.
Cook: Cover and cook on LOW for 6-8 hours.
Add the veggies: After about 5 hours, add the sliced bell peppers and onions. Stir to combine and continue cooking for another 1-2 hours until the vegetables are tender.
Serve: Serve the pepper steak over rice or with your desired sides. Enjoy!
