Scalloped Potatoes Recipe

Tip: These creamy and cheesy scalloped potatoes have approximately 250-300 calories per serving, depending on portion size. Perfect for a comforting side dish during holidays, family dinners, or just any meal that needs a rich, savory accompaniment!

Ingredients:
¼ cup butter

1 large onion, diced

2 cloves garlic, minced

¼ cup flour

2 cups milk

1 cup chicken broth

½ teaspoon salt

¼ teaspoon pepper

3 pounds white potatoes, sliced about β…›" thick

Salt and pepper to taste

Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).

Make the Sauce:

In a medium saucepan, melt butter over medium-low heat.

Add diced onion and minced garlic, and cook until the onion softens, about 3 minutes.

Add flour and cook for 1-2 minutes, stirring constantly.

Reduce heat to low, then slowly add milk and chicken broth, a small amount at a time, whisking continuously to avoid lumps.

Once all the liquid has been added, bring the mixture to a boil over medium heat, continuing to whisk.

Stir in salt and pepper, and let it boil for 1 minute to thicken.

Assemble the Dish:

Grease a 9"x13" baking dish with butter or cooking spray.

Place β…“ of the sliced potatoes in the bottom of the dish. Season with salt and pepper.

Pour β…“ of the cream sauce over the potatoes.

Repeat the layers, ending with the cream sauce on top.

Bake:

Cover the baking dish with aluminum foil and bake for 45 minutes.

After 45 minutes, uncover the dish and bake for an additional 35-45 minutes, or until the potatoes are tender and the top is golden brown.

Optionally, broil for 3-4 minutes to get a crisp, golden top.

Rest and Serve:

Allow the scalloped potatoes to rest for 15 minutes before serving. This allows the sauce to thicken and makes it easier to cut into serving portions.

Notes:
Saving Energy: If you have a convection oven, it can speed up the cooking time and help save energy. Additionally, you can prepare the sauce ahead of time and refrigerate it until you're ready to assemble the dish, saving time on cooking.

Health Benefits: While this dish is indulgent, it offers some nutritional benefits from the potatoes (fiber and potassium) and the garlic and onion (which have antioxidants). However, the butter and cream sauce make it a calorie-dense dish, so it’s best enjoyed in moderation as a rich side.
