Rib-eye Steaks with Garlic Butter and Caramelized Onions

Ingredients:

  • 2 rib-eye steaks (1 1/2 inch thick)

  • 2 teaspoons Kosher salt

  • 1 teaspoon black pepper

  • 2 tablespoons olive oil

  • 4 tablespoons butter

  • 4-5 garlic cloves, smashed

  • 1 medium onion, cut into thin rings


Instructions:

1️⃣ Prepare the Steaks:
Bring the rib-eye steaks to room temperature. Generously season both sides with kosher salt and black pepper.

2️⃣ Caramelize the Onions:
Heat a 12-inch cast-iron skillet over medium-high heat. Add 2 tablespoons of butter and 1 tablespoon of olive oil. Once the butter has melted, add the sliced onions. Reduce heat to medium-low and cook for 15-20 minutes, stirring every minute to prevent burning. Once golden and soft, remove the onions from the skillet and set aside.

3️⃣ Cook the Steaks:
Increase the heat to high. Add 1 tablespoon of olive oil to the skillet. When the pan starts to smoke, add the steaks. Cook for 4-5 minutes, then flip the steaks to cook the other side.

4️⃣ Baste with Garlic Butter:
Add the remaining 2 tablespoons of butter to the skillet and allow it to foam. Add in the smashed garlic cloves. While cooking, use a spoon to continuously baste the steaks with the melted butter. Cook for another 3-4 minutes for medium-rare or longer for your desired doneness.

5️⃣ Serve:
Once the steaks are done to your preference, remove from the skillet and let them rest for a few minutes. Spoon the pan sauce and caramelized onions over the steaks before serving.

For the perfect steak, use a meat thermometer to check the internal temperature:

  • Medium-rare: 130°F

  • Medium: 140°F

  • Well-done: 160°F
