1. Cookie Base

1 cup unsalted butter, softened (225g)

1 cup granulated sugar (200g)

½ cup packed brown sugar (100g)

2 large eggs

1 tsp vanilla extract

1 ½ cups shelled pistachios, roughly chopped (180g)
2. Pistachio Filling

1 cup sweetened condensed milk (240ml)
-
½ cup pistachio butter (or smooth peanut butter as a substitute)
-
1 cup white chocolate chips (175g)
-
½ cup shelled pistachios, chopped (optional, for topping)
Instructions
πΉ Step 1: Prepare the Cookie Base

Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper, leaving an overhang for easy removal of the bars.

In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes using a hand mixer or stand mixer).

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry ingredients into the wet mixture and mix until just combined.

Fold in the chopped pistachios, ensuring they’re evenly distributed throughout the dough.
πΉ Step 2: Press the Cookie Dough into the Pan

Take about ¾ of the cookie dough and press it evenly into the bottom of the prepared baking pan. The layer should be smooth and even.

Set aside the remaining dough for topping.

In a medium saucepan over low heat, combine the sweetened condensed milk and pistachio butter. Stir occasionally until the mixture is smooth and well combined.

Remove from heat and fold in the white chocolate chips. Continue to stir until the white chocolate has melted and the mixture is smooth.

Pour the pistachio filling over the pressed cookie dough in the baking pan, spreading it out evenly.

Take the remaining cookie dough and drop small spoonfuls over the pistachio filling. Use a spatula or your fingers to gently spread it out, but it doesn’t need to be perfect – it’s fine if some filling is still visible.

Bake the bars in the preheated oven for 30-35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. The filling will firm up and the cookie dough will turn golden.

Once baked, remove the bars from the oven and let them cool in the pan for at least 20 minutes before transferring them to a wire rack to cool completely.
