Pecan Upside Down Cake

Tip: This delicious pecan upside down cake has approximately 350-400 calories per slice, depending on portion size. It’s a perfect dessert for family gatherings, special occasions, or just when you want a sweet, nutty treat. Serve with a scoop of vanilla ice cream or whipped cream for an extra indulgence!

Ingredients:
1 yellow cake mix

1 pack of instant vanilla pudding

3 eggs

½ cup oil

1 cup water

1 stick of butter (melted)

Light brown sugar (for the bottom of the pan)

Pecans (for the topping)

Instructions:
Prepare the Cake Mix:

In a large mixing bowl, combine the yellow cake mix, instant vanilla pudding, eggs, oil, and water. Mix until smooth and well combined.

Prepare the Pan:

Spray a bundt pan (or square/oblong pan) with baking spray.

Melt 1 stick of butter and pour it into the bottom of the pan.

Sprinkle a layer of light brown sugar over the melted butter.

Add a layer of pecans on top of the brown sugar.

Assemble the Cake:

Pour the cake batter on top of the pecans, ensuring it covers them evenly.

Bake:

Bake at 350°F (175°C) for 35 to 45 minutes. If using a bundt pan, it may take closer to 45 minutes to fully cook. Check by inserting a toothpick; it should come out clean when the cake is done.

Cool & Serve:

Allow the cake to cool before flipping it onto a plate.

Serve and enjoy your delicious pecan upside down cake!

Notes:
Saving Energy: Since this cake bakes in a single pan, it’s energy-efficient and easy to clean up. You can use a convection oven to bake faster and save additional energy.

Health Benefits: While this cake is indulgent, the pecans provide some healthy fats and protein. However, the butter and sugar add significant calories and fat, so it’s best enjoyed as an occasional treat.
