No-Bake Pineapple Cream Dessert 🍍🍰

This easy-to-make, no-bake pineapple cream dessert is perfect for any occasion, bringing a sweet tropical flavor with a creamy texture. It’s an ideal treat for summer or any time you want a refreshing dessert without turning on the oven!

Ingredients:

For the Pineapple Layer:

  • 1 can (20 oz) crushed pineapple in juice

  • 1 package (8 oz) cream cheese, softened

  • 1 cup powdered sugar

  • 1 cup heavy cream

  • 1 teaspoon vanilla extract

  • 1 cup crushed graham crackers or digestive biscuits

  • 2 tablespoons melted butter

For the Whipped Topping:

  • 1 cup heavy whipping cream

  • 2 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

Instructions:

1. Prepare the Crust:

  • In a mixing bowl, combine the crushed graham crackers (or digestive biscuits) with melted butter. Stir until the mixture is well-combined and moist.

  • Press this mixture into the bottom of a 9x9-inch (or similar-sized) baking dish to form an even crust.

  • Refrigerate for at least 15 minutes to set while you prepare the rest of the dessert.

2. Make the Pineapple Cream Filling:

  • Drain the crushed pineapple to remove excess juice. Set aside the pineapple juice for later use in another recipe, or discard it.

  • In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.

  • Add the heavy cream and vanilla extract to the cream cheese mixture, and continue to beat until the mixture thickens slightly and becomes fluffy.

  • Fold in the drained crushed pineapple, gently mixing it in until well combined.

3. Assemble the Dessert:

  • Once the crust has set, spread the pineapple cream mixture evenly over the prepared crust. Smooth the top with a spatula to make it even.

  • Refrigerate the dessert for at least 3 hours, or preferably overnight, to allow the flavors to meld together and the dessert to set properly.

4. Prepare the Whipped Topping:

  • In a chilled mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.

  • Once the dessert is set, spread the whipped cream topping evenly over the pineapple cream layer.

5. Serve and Enjoy:

  • Slice the dessert into squares and serve chilled.

  • Optionally, garnish with extra crushed pineapple or fresh mint leaves for added decoration.

Notes:

  • This dessert is best made ahead of time to ensure it has plenty of time to set in the fridge.

  • If you prefer a firmer crust, you can bake it at 350°F (175°C) for about 8-10 minutes, then let it cool before assembling the dessert.

  • You can substitute the heavy cream with whipped topping for a lighter version.

Calories (per serving): Approx. 250-300 calories, depending on serving size and specific ingredients used.

Tips:

  • Store leftovers in the refrigerator for up to 3 days.

  • This dessert is also delicious with other tropical fruits like mango or coconut. You can experiment with adding them to the filling for a twist on the classic recipe!
