No-Bake Marshmallow Slice Recipe

This No-Bake Marshmallow Slice is a quick, delicious, and easy treat that combines marshmallows, chocolate, and a crunchy biscuit base. It’s perfect for satisfying your sweet tooth without having to turn on the oven!
Ingredients
For the Base:
- 200g (about 7 oz) digestive biscuits or graham crackers, crushed
- 1/2 cup unsalted butter, melted
- 1/4 cup honey or golden syrup (for sweetness and stickiness)
For the Marshmallow Layer:
- 3 cups mini marshmallows
- 1/2 cup chocolate chips (milk or dark chocolate, depending on preference)
- 1/4 cup desiccated coconut (optional, for extra texture and flavor)
For the Chocolate Topping:
- 1 cup chocolate chips (milk or dark chocolate)
- 1 tablespoon vegetable oil or coconut oil (to help smooth the chocolate topping)
Instructions
Step 1: Prepare the Base
- Line a 9x9 inch or 8x8 inch square baking pan with parchment paper, leaving a bit of overhang for easy removal.
- Crush the biscuits or graham crackers into small crumbs. You can do this by placing them in a zip-top bag and crushing them with a rolling pin, or using a food processor.
- In a mixing bowl, combine the crushed biscuits, melted butter, and honey or golden syrup. Stir well until everything is coated and the mixture sticks together.
- Press the biscuit mixture into the prepared pan, creating an even base. Use the back of a spoon to firmly pack it down. Place the pan in the refrigerator to chill while you prepare the marshmallow layer.
Step 2: Prepare the Marshmallow Layer
- In a large saucepan, melt the chocolate chips over low heat, stirring occasionally until smooth. You can also melt the chocolate in the microwave in short bursts, stirring in between.
- Once the chocolate is melted, remove the saucepan from the heat and stir in the mini marshmallows. Mix until the marshmallows are evenly coated with the chocolate.
- If you’re using desiccated coconut, fold it into the marshmallow mixture now.
- Pour the marshmallow mixture over the chilled biscuit base, spreading it evenly across the surface with a spatula.
Step 3: Prepare the Chocolate Topping
- In a small bowl, melt the chocolate chips for the topping with vegetable oil (or coconut oil) over low heat. Stir until smooth and glossy.
- Pour the melted chocolate over the marshmallow layer, spreading it evenly to cover the top.
- Place the slice back in the refrigerator to chill for at least 2 hours, or until firm.
Step 4: Slice and Serve
- Once the slice has set and the chocolate topping has hardened, lift it out of the pan using the parchment paper overhang.
- Slice it into squares or rectangles, and serve!
Tips for the Best No-Bake Marshmallow Slice
- Flavor variations: You can add extra mix-ins to the marshmallow layer, such as chopped nuts, chocolate chunks, or raisins for added texture.
- Chill time: Ensure that the slice is fully chilled before cutting to ensure clean slices and better texture.
- Sweetness: If you prefer a less sweet base, reduce the amount of honey or golden syrup.
Storage
- Refrigeration: Store the No-Bake Marshmallow Slice in an airtight container in the refrigerator for up to 1 week.
