
Mississippi Pot Roast Tacos

Tip: These flavorful tacos have about 300-350 calories per taco, depending on portion size and the amount of cheese used. They’re a delicious and hearty meal that brings together the flavors of Mississippi pot roast with the crispy goodness of tacos!
Ingredients:
4 lb Chuck roast (buy on sale for around $4.99/lb)
1 packet Au Jus seasoning
1 packet ranch seasoning
1/4 stick of butter
1 jar of peperoncinis (about 6-10 peppers)
Corn tortillas (about 30 for a full batch)
1 bag of shredded mozzarella cheese
Instructions:
Step 1:
Follow the Mississippi pot roast instructions to cook in a crockpot:
Place the chuck roast in the crockpot.
Sprinkle Au Jus and ranch seasoning over the roast.
Add the butter and peperoncinis (with some of the juice from the jar).
Cook on low for 8 hours (or 9-12 hours for a longer cook time).
Step 2:
Once the roast is done, shred the meat with a fork in the crockpot. You can leave it in the juices to stay moist.
Step 3:
To assemble the tacos, heat a frying pan over medium heat.
Dip both sides of a corn tortilla into the juice/broth from the shredded meat.
Step 4:
Place the dipped tortilla in the hot frying pan.
Add a spoonful of shredded meat and top with mozzarella cheese on one half of the tortilla.
Step 5:
Fold the tortilla in half, then flip it to the other side. Fry until golden brown on both sides.
Step 6:
Repeat with the remaining tortillas until all tacos are made.
Serving Suggestions:
Serve your tacos with a side of salsa, sour cream, or your favorite hot sauce for extra flavor.
For a fresh touch, add shredded lettuce or chopped onions as toppings.
Notes:
Saving Energy: The crockpot cooks the meat efficiently without needing much attention, and using the broth from the meat to cook the tortillas eliminates the need for extra oil, saving on both time and energy.
