Mexican Soup

Tip: This flavorful and hearty Mexican soup has approximately 300-350 calories per serving, depending on the amount of ground beef and cream cheese used. It's perfect for a quick dinner or as a comforting dish on a chilly day. Serve it with tortilla chips or a side of rice for a complete meal!

Ingredients:
1 pound ground beef (browned and drained)

2 green onions, chopped

1 can of mild Rotel tomatoes with chilies

4 oz cream cheese

1 1/2 cups chicken broth

1 tsp garlic powder

1 tsp cumin

Tony’s seasoning (to taste)

Instructions:
Brown the Ground Beef:

In a large pot, brown the ground beef with the chopped green onions over medium heat.

Drain any excess fat and return the beef to the pot.

Add the Cream Cheese:

Add the cream cheese to the pot and stir until it melts and combines with the ground beef.

Add the Tomatoes and Broth:

Stir in the can of Rotel tomatoes with chilies and the chicken broth.

Add the garlic powder, cumin, and Tony’s seasoning to taste.

Simmer:

Let the soup cook on medium-low heat for about 30 minutes to an hour, stirring occasionally, until everything is well combined and heated through.

Serve:

Ladle the soup into bowls and serve hot. Enjoy your Mexican-inspired soup!

Notes:
Saving Energy: This soup cooks fairly quickly, so it's an energy-efficient meal. You can also make it ahead of time and reheat for an even faster dinner.

Health Benefits: This soup provides protein from the beef and some vitamins and antioxidants from the tomatoes and onions. However, due to the cream cheese and seasonings, it’s rich in fat and calories, so it’s best enjoyed in moderation. You can use lean ground beef or reduce the cream cheese for a lighter version!
