Meatball Boats – A delicious twist on the classic meatball sub, served in a perfectly baked bread boat!

Ingredients:

For the Meatballs:

  • 1 lb ground beef

  • 1 large egg

  • 1/3 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 2 garlic cloves, minced

  • 1 Tbsp chopped parsley

  • Kosher salt (to taste)

  • Freshly ground black pepper (to taste)

  • 1 Tbsp olive oil

  • 2 cups marinara sauce

For the Bread Boats:

  • 4 crusty Italian sandwich rolls

  • 12 slices provolone cheese

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup shredded Parmesan cheese

Directions:

Step 1: Prepare the Meatballs

  1. Preheat the oven to 375°F (190°C). Spray a baking sheet with non-stick spray.

  2. In a large bowl, combine the ground beef with the egg, breadcrumbs, Parmesan cheese, garlic, and parsley. Season with salt and pepper.

  3. Mix everything well and form the mixture into 12 evenly sized meatballs.

  4. In a large skillet, heat the olive oil over medium heat. Cook the meatballs until they are seared on all sides, about 4 minutes.

  5. Add the marinara sauce to the skillet, gently stir, and cover with a lid. Reduce the heat to simmer and cook for 8-10 minutes, or until the meatballs are fully cooked (internal temperature should be 160°F).

Step 2: Prepare the Bread Boats

  1. While the meatballs are simmering, cut a long rectangle through the top of the Italian rolls and hollow out the center to create a "boat."

  2. Place three slices of provolone cheese over the hollowed-out part of each roll and bake for 5 minutes, or until the cheese is melted.

Step 3: Assemble the Meatball Boats

  1. Place four meatballs on top of the melted provolone cheese in each roll.

  2. Spoon marinara sauce over the meatballs, then sprinkle with shredded mozzarella and Parmesan cheese.

Step 4: Bake the Meatball Boats

  1. Place the filled bread boats on the baking sheet and bake for 6-8 minutes, or until the cheese is bubbly and golden. You can broil for 1-2 minutes for a crispier cheese top.

Step 5: Serve and Enjoy

  1. Let the meatball boats cool for a few minutes before serving. Enjoy this cheesy, savory delight!
