Low-Carb Crack Slaw

Cooking Time: 25 minutes


Ingredients:

  • 2 lbs ground beef or turkey

  • 2 bags cole slaw mix

  • 4 green onions, chopped

  • 3 tsp minced garlic

  • 3 tbsp soy sauce

  • 2 tbsp sesame oil

  • 2 tsp red pepper flakes

  • 2 tsp ground ginger

  • Optional: Add 1 packet of Splenda (for a hint of sweetness)


Instructions:

1️⃣ Cook the ground meat: In a large pan, cook the ground beef or turkey over medium heat until browned, breaking it apart as it cooks. Drain the excess fat and set the meat aside.

2️⃣ Stir-fry the vegetables: In a separate pan, heat the sesame oil over medium heat. Add the soy sauce, chopped green onions, and minced garlic. Stir-fry for 2-3 minutes until the onions are tender.

3️⃣ Add the cabbage: Add the cole slaw mix (shredded cabbage) to the pan along with the red pepper flakes and ground ginger. Stir-fry for 5-7 minutes until the cabbage is mostly tender but still has a slight crunch.

4️⃣ Combine: Add the cooked ground meat to the vegetable mixture, stirring everything together until well combined. Adjust the seasoning by adding a little more soy sauce if desired. If you like a touch of sweetness, add the packet of Splenda at this point.

5️⃣ Serve: Stir everything together, heat through for another 2 minutes, and serve immediately. This dish is perfect for a low-carb, moderate-fat meal!
