Ingredients:
For the Cake:
- 2 ½ cups (310g) all-purpose flour

- 1/2 cup (120ml) Limoncello liqueur
- 1/2 cup (120ml) whole milk
For the Limoncello Syrup:
- 1/4 cup (60ml) Limoncello liqueur
- 1/4 cup (60ml) fresh lemon juice
- 2 tablespoons granulated sugar
For the Mascarpone Frosting:
- 8 oz (225g) mascarpone cheese, softened
- 1 ½ cups (360ml) heavy whipping cream
- 1/2 cup (50g) powdered sugar
- 2 tablespoons Limoncello liqueur
- 1 teaspoon vanilla extract
- Zest from 1 lemon (for garnish)
- Optional: Edible flowers or fresh berries for decoration
Instructions:
Step 1: Prepare the Cake
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper for easy removal later.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the unsalted butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

- While the cakes are cooling, prepare the Limoncello syrup. In a small saucepan, combine the Limoncello liqueur, fresh lemon juice, and granulated sugar.
- Heat over medium heat, stirring constantly, until the sugar has dissolved and the syrup has slightly thickened, about 2-3 minutes. Remove from heat and set aside to cool.
Step 3: Prepare the Mascarpone Frosting
- In a medium mixing bowl, beat the mascarpone cheese with an electric mixer until smooth and creamy.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form.
- Add the powdered sugar, Limoncello liqueur, and vanilla extract to the mascarpone cheese and mix until fully combined.
- Gently fold the whipped cream into the mascarpone mixture until smooth and fluffy. Be careful not to deflate the whipped cream.
Step 4: Assemble the Cake
- Once the cakes have completely cooled, place the first cake layer on a serving plate or cake stand.
