Ingredients:

- 1/4 cup (50g) granulated sugar

- 1 egg yolk
- 2 tablespoons ice water (as needed)

- 8 oz (225g) cream cheese, softened
- 1/2 cup (120g) granulated sugar
- 2 large eggs
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon zest (freshly grated)
- 1/4 cup (60ml) fresh lemon juice
- 1 teaspoon vanilla extract
For the Lemon Glaze:
- 1/2 cup (60g) powdered sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest (optional, for extra lemony flavor)
Instructions:
Step 1: Prepare the Crust
- Preheat the oven to 350°F (175°C). Grease a 9x9-inch square baking pan or line it with parchment paper for easy removal later.
- In a medium-sized bowl, combine the all-purpose flour, granulated sugar, and salt. Mix to combine.
- Add the cold butter into the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
