Preparation Time: 20 minutes
Baking Time: 18-22 minutes
Servings: 12 cupcakes
Best Time to Serve: Ideal for dessert, afternoon tea, or as a sweet treat for any occasion!
Ingredients
1. Cupcake Batter:
-
1 ½ cups all-purpose flour (180g)
-
1 tsp baking powder
-
½ tsp baking soda
-
¼ tsp salt
-
½ cup unsalted butter, softened (115g)
-
1 cup granulated sugar (200g)
-
2 large eggs
-
1 tsp vanilla extract
-
½ cup sour cream (120g)
-
¼ cup honey (60ml)
-
½ cup fresh peaches, finely chopped (about 1 medium peach)
-
2 tbsp peach juice or nectar (optional, for extra flavor)
2. Cream Cheese Frosting:
-
8 oz cream cheese, softened (225g)
-
½ cup unsalted butter, softened (115g)
-
1 tsp vanilla extract
-
2 cups powdered sugar (240g)
-
2 tbsp honey (optional, for extra sweetness)
-
Fresh peach slices (for garnish, optional)
Instructions
πΉ Step 1: Prepare the Cupcake Batter
-
Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
-
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
-
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.
-
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Start and end with the dry ingredients, mixing just until combined. Be careful not to overmix.
-
Gently fold in the chopped peaches and peach juice (if using) until evenly distributed throughout the batter.
-
Spoon the batter into the cupcake liners, filling each about 2/3 full.
-
Bake for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
πΉ Step 2: Make the Cream Cheese Frosting
-
In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy, about 2 minutes.
-
Add the vanilla extract and honey (if using), and mix until well combined.
-
Gradually add the powdered sugar, ½ cup at a time, beating until smooth and fluffy. If the frosting is too thick, you can add a small amount of milk to reach your desired consistency.
-
Beat the frosting for 1-2 more minutes to ensure it’s light and fluffy.
πΉ Step 3: Frost the Cupcakes
-
Once the cupcakes are completely cool, use a piping bag or a spatula to frost each cupcake generously with the cream cheese frosting.
-
Optionally, garnish each cupcake with a fresh peach slice or extra chopped peaches for added flavor and decoration.
πΉ Step 4: Serve and Enjoy
-
Allow the frosting to set for a few minutes before serving.
-
Serve the cupcakes immediately or store them in an airtight container in the fridge for up to 3 days.
Tips for the Perfect Honey Peach Cream Cheese Cupcakes
-
Peach Tip: Use fresh, ripe peaches for the best flavor. If peaches are out of season, you can substitute with canned peaches (drained) or peach preserves.
-
Honey Flavor: Adjust the amount of honey in the frosting to suit your taste, especially if you want the honey flavor to be more pronounced.
-
Sour Cream: Sour cream keeps the cupcakes moist and adds a slight tanginess. If you prefer a lighter cupcake, you can substitute it with plain yogurt.
-
Peach Juice: If you can’t find peach juice or nectar, you can use a little bit of peach syrup from canned peaches for the same flavor boost.
Calories (estimated)
-
1 cupcake (with frosting): ~350-400 kcal (depending on the amount of frosting used)
Energy-Saving Tips
-
Make the frosting ahead of time and refrigerate it until you’re ready to frost the cupcakes.
-
If you have a stand mixer, it will save time and energy when making the frosting.
Who Would Enjoy This?
-
Peach lovers who enjoy the delicate flavor of fresh fruit in their desserts.
-
Those who love rich, creamy frosting paired with soft, moist cupcakes.
-
Perfect for family gatherings, birthday parties, or a special treat to enjoy with tea or coffee.
