Samoas, also known as Caramel deLites, are one of the most popular Girl Scout cookie varieties, featuring a crunchy cookie base, a layer of rich caramel, toasted coconut, and a drizzle of chocolate. Making them at home is easier than you think, and this recipe will help you create these irresistible cookies right in your kitchen!


Ingredients:

For the Cookie Base:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1/4 teaspoon salt

  • 2 teaspoons vanilla extract

  • 2 1/4 cups all-purpose flour

Instructions:

1. Prepare the Cookie Base:

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

  • In a large mixing bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy. This will take about 3-4 minutes.

  • Add the vanilla extract and salt to the butter mixture and continue mixing until fully combined.

  • In a separate bowl, whisk together the flour and baking soda.

2. Toast the Coconut:

  • Allow the caramel-topped cookies to cool for a few minutes while you prepare the chocolate drizzle.

5. Make the Chocolate Drizzle:

  • In a small microwave-safe bowl, melt the semisweet chocolate chips and vegetable oil in the microwave in 20-30 second intervals, stirring in between until smooth and fully melted. Alternatively, you can melt the chocolate over a double boiler on the stovetop.

  • Once melted, transfer the chocolate to a piping bag or a small plastic sandwich bag with the tip cut off.
