Ingredients
1. Peppermint Filling

2 cups powdered sugar (240g)

2 tbsp unsalted butter, softened (30g)

3 tbsp milk (45ml)

1 tsp pure peppermint extract (adjust to taste)

¼ tsp vanilla extract (optional)
2. Chocolate Coating

12 oz dark chocolate (340g), chopped (you can also use milk chocolate if you prefer)

1 tbsp coconut oil or vegetable oil (to help the chocolate set smoothly)
Instructions
πΉ Step 1: Make the Peppermint Filling

In a medium-sized bowl, combine the powdered sugar, softened butter, milk, peppermint extract, and vanilla extract (if using).

Mix together using a hand mixer or spoon until the ingredients form a smooth, thick dough. If the mixture is too sticky, add a little more powdered sugar until you reach the desired consistency. It should be firm enough to hold its shape but still soft and pliable.

Once the mixture is smooth, divide it into small portions (about 1 tablespoon each) and roll them into small balls. Then, flatten each ball into a round disc shape. You can use your fingers or the back of a spoon to flatten them evenly.

Place the discs onto a parchment-lined baking sheet. Continue until all the filling is used up.

Once all the peppermint patties are shaped and placed on the baking sheet, refrigerate them for at least 1 hour, or until they become firm and easy to handle.

While the peppermint patties are chilling, prepare the chocolate coating. In a heatproof bowl, melt the dark chocolate and coconut oil together. You can melt the chocolate using a microwave in 30-second intervals, stirring in between, or by using a double boiler on the stove.

Once the peppermint patties are chilled and firm, dip each one into the melted chocolate, coating it completely. You can use a fork or a skewer to hold the patties while dipping them.
