Family Night Chicken and Broccoli Pasta Bake

Ingredients:
1 pound chicken tenders, cut into bite-size pieces

3 cups fresh broccoli florets

1 1/2 cups dry small-shaped pasta

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

Kosher salt and fresh black pepper (to taste)

1/2 teaspoon onion powder

3/4–1 cup chicken broth

2 tablespoons shredded Parmesan cheese

4 ounces cream cheese, cut into cubes

1 1/2 cups shredded mozzarella cheese (divided)

Instructions:
Step 1:

Cook the pasta in a pot of salted boiling water according to the package directions.

In the last 2 minutes of cooking, add the broccoli florets to the boiling pasta.

Drain the pasta and broccoli, and set aside.

Step 2:

In a bowl, toss the chicken pieces with paprika, garlic powder, onion powder, salt, and pepper.

Step 3:

In a large sauté pan, heat the olive oil over medium-high heat.

Once the oil is hot, add the chicken and sear for 2-3 minutes until browned.

Step 4:

Pour in the chicken broth and bring it to a simmer.

Add the cream cheese and stir well until it melts.

Stir in 3/4 cup of the mozzarella cheese and continue stirring until the sauce slightly thickens.

Step 5:

Turn off the heat and gently toss in the cooked pasta and broccoli mixture. Stir to combine.

Step 6:

Transfer the mixture to a baking dish and cover with foil.

Bake in a preheated 375°F oven for about 15 minutes.

Step 7:

Remove from the oven and sprinkle the remaining mozzarella cheese and Parmesan cheese on top.

Return to the oven and bake for an additional 3 minutes, uncovered, until the cheese is melted.

Step 8:

Allow the chicken and broccoli pasta bake to rest for about 5 minutes before serving.
