Deb's Easy Corn Casserole:

Không có mô tαΊ£ αΊ£nh.

Ingredients:

  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 package (8.5 oz) Jiffy cornbread mix
  • 1 cup sour cream
  • 1/2 cup (1 stick) butter, melted
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven:
Start by preheating your oven to 350°F (175°C). This ensures that the oven is at the right temperature when you’re ready to bake your casserole. While the oven is heating up, you can work on preparing the casserole itself.

  2. Prepare the baking dish:
Lightly grease a 9x9-inch baking dish (or a similar-sized casserole dish) with butter or non-stick spray to prevent the casserole from sticking. You could also line it with parchment paper, but greasing is usually enough for this recipe.

  3. Mix the ingredients:
In a large mixing bowl, combine the following ingredients:

    • 1 can of whole kernel corn (drained)
    • 1 can of creamed corn (don’t drain)
    • 1 package of Jiffy cornbread mix
    • 1 cup sour cream
    • 1/2 cup melted butter

Use a spoon or spatula to stir everything together until it's well mixed. The mixture will be somewhat thick but smooth. If you like a more creamy consistency, you can add a little more sour cream or butter, depending on your preference.

  4. Add optional ingredients:
If you’re using shredded cheddar cheese, fold it into the mixture at this point. This adds extra flavor and a creamy texture once baked. Salt and pepper can be added to taste, but keep in mind that the canned corn and the Jiffy mix already bring some saltiness, so don’t overdo it.

  5. Pour into the baking dish:
Once the mixture is thoroughly combined, pour it into the greased baking dish. Spread it out evenly with a spatula, ensuring that the mixture is level.

  6. Bake the casserole:
Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the casserole is firm in the center. You may want to check around the 40-minute mark—if the top is getting too brown, cover it loosely with foil and continue baking until it’s done. The casserole should be puffed up and slightly crispy around the edges.

  7. Cool slightly and serve:
Once the casserole is out of the oven, let it sit for 5-10 minutes to cool slightly before serving. This allows the casserole to set up a little more and makes it easier to serve.

  8. Serve and enjoy:
Scoop out generous portions of the casserole, and enjoy it as a side dish with your favorite main course. This easy corn casserole is a hit at family gatherings, holiday meals, or even just as a comforting side with a simple dinner.

Additional Tips:

  • Make it ahead: If you want to make this dish ahead of time, you can prepare it and then refrigerate it uncooked. When you're ready to bake, just pop it in the oven and bake as directed, though it may need a little extra time since it will be cold from the fridge.

  • Add-ins: You can experiment with different add-ins like chopped green chilies, bacon bits, or even a bit of bell pepper for extra flavor and texture. Just fold them into the mixture along with the cheese.

  • Serving suggestions: This corn casserole pairs wonderfully with roasted meats, grilled chicken, or even as a vegetarian main dish if you want something simple and hearty.

This recipe is beloved for its simplicity and comforting flavor. With its moist, creamy texture and slight sweetness from the corn, it’s sure to become a favorite in your household!
