Crockpot Chicken and Noodles

Tip: This hearty, comforting chicken and noodles recipe is around 400-500 calories per serving, depending on the portion size and specific ingredients used. It’s perfect for busy days when you want a filling, homemade meal that requires little prep time. Serve with warm biscuits for the ultimate cozy dinner!

Ingredients:
2 frozen chicken breasts (fairly large)

1 32oz container of 50% less sodium chicken broth

1 packet of chicken gravy mix

1 family size can of cream of chicken soup

1/2 stick of butter

1 24oz pack of frozen egg noodles (Reames or similar)

1 10oz bag of frozen mixed veggies

1/2 teaspoon pepper

1/2 teaspoon onion powder

A sprinkle of dried parsley

Instructions:
Prepare the Ingredients:

Add the frozen chicken breasts, chicken broth, chicken gravy packet, cream of chicken soup, butter, pepper, onion powder, and dried parsley into your crockpot.

Stir to combine everything.

Cook the Chicken:

Cover the crockpot and cook on high for about 5 hours, or until the chicken is fully cooked and tender.

Shred the Chicken:

Once the chicken is cooked, use a fork to shred the chicken directly in the crockpot.

Add the Noodles and Veggies:

Add the frozen noodles and mixed veggies into the crockpot.

Stir to combine everything, then cook for another hour, or until the noodles are done to your liking.

Serve:

Serve hot with biscuits or any side of your choice for a complete meal.

Notes:
Saving Energy: The crockpot method is energy-efficient as it requires low, consistent heat for several hours.

Health Benefits: This meal provides protein from the chicken, fiber from the veggies, and carbohydrates from the noodles. However, the cream of chicken soup and gravy mix make it a bit rich, so it's best enjoyed in moderation. You can make it lighter by using a lower-fat soup and gravy mix if desired!
