Cracker Barrel Meatloaf πŸ˜‹

Plated dinner plate with meatloaf and veggies

Tip: This meatloaf has approximately 350-400 calories per serving, depending on the size of the slice. It’s perfect for a hearty dinner with family or friends, especially if you need to feed a crowd, as it makes a large batch. Serve it with mashed potatoes or vegetables for a satisfying meal.

Ingredients:
2 pounds lean ground beef

1 small finely diced onion

1/2 cup finely diced bell pepper (optional)

1 1/2 sleeves of crushed Ritz crackers (48 crackers total)

4 oz. shredded sharp cheddar or Colby cheese

3 eggs

1/2 cup milk

1 tsp. salt

1/4 tsp. black pepper

For the topping:

1/2 to 3/4 cup ketchup

2 tbsp. brown sugar

1 tsp. mustard

Directions:
Preheat the oven to 350°F (175°C).

In a small bowl, combine the ketchup, brown sugar, and mustard. Set aside for later use as the topping.

In a large bowl, combine the eggs, crushed Ritz crackers, cheese, milk, onion, bell pepper, salt, and black pepper. Mix well.

Add the ground beef and mix until just combined. Do not overmix.

Form the mixture into a loaf shape and place it inside a baking pan or baking sheet lined with foil or parchment paper.

Bake at 350°F (175°C) for 30 minutes.

Remove from the oven and spread the topping over the meatloaf.

Bake for an additional 30-40 minutes or until the center reaches 160°F (71°C).

Let the meatloaf cool for 15 minutes before serving.

Notes:
Saving Energy: To save on energy, consider using a convection oven or toaster oven if cooking smaller portions. These methods heat up faster and cook more efficiently than a standard oven.

Health Benefits: This meatloaf is rich in protein from the beef and eggs, and it can be a great source of energy for those needing a hearty meal. However, it’s also quite rich in calories and fat, so it’s best enjoyed in moderation, particularly for those watching their calorie intake or managing heart health.
