Cherry Bars for a Crowd

Tip: These cherry bars are perfect for a large gathering, offering about 250-300 calories per square. They are sweet, fruity, and topped with a simple glaze, making them an irresistible treat for any occasion.

Ingredients:

For the Bars:

  • 1 1/2 cups butter, softened

  • 3 cups granulated sugar

  • 1 1/2 teaspoon salt

  • 5 large eggs

  • 1 1/2 teaspoon vanilla extract

  • 1 1/2 teaspoon almond extract

  • 5 1/2 cups all-purpose flour

  • 1 1/2 teaspoon baking powder

  • 2 cans (21 oz each) cherry pie filling

For the Glaze:

  • 1 cup confectioner’s sugar

  • 3 tablespoons milk

Instructions:

Step 1:

  • Preheat the oven to 350°F (175°C).

  • Line a jelly roll pan (12x17 inches) with aluminum foil and spray with nonstick spray. Set aside.

Step 2:

  • In the bowl of a stand mixer, cream together the softened butter and sugar for about 1-2 minutes.

  • Add salt, eggs, and vanilla and almond extracts, continuing to mix until fully incorporated.

Step 3:

  • Gradually add the flour and baking powder, mixing until just combined.

  • Reserve 1 3/4 cups of dough and set aside.

Step 4:

  • Press the remaining dough into the prepared jelly roll pan, spreading it evenly.

  • Top the dough with the cherry pie filling, spreading it out evenly.

Step 5:

  • Drop the reserved dough in small pieces over the cherry filling, covering it partially.

Step 6:

  • Bake in the preheated oven for 50-60 minutes or until golden brown.

  • Remove from the oven and allow the bars to cool completely on a wire rack.

Step 7:

  • Once the bars have cooled, prepare the glaze by whisking together the confectioners’ sugar and milk until smooth.

  • Drizzle the glaze over the cooled bars.

Step 8:

  • Cut into 35 squares and serve.

Notes:

  • Saving Energy: This recipe uses a single baking pan and requires only one round of baking, making it relatively energy-efficient for a large batch of treats.

  • Health Benefits: These cherry bars are indulgent and calorie-dense due to the butter, sugar, and cherry pie filling. You can make a lighter version by using a sugar substitute or low-fat butter. Enjoy in moderation, especially when serving at large gatherings!
