Canned salmon patties

Ingredients:
- 1 can of salmon (about 14.75 oz), drained and flaked
- 1/2 cup breadcrumbs (or crushed crackers)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (optional)
- 1/4 cup mayonnaise
- 1 large egg
- 1 tablespoon Dijon mustard (optional)
- 1 teaspoon garlic powder
- 1 teaspoon lemon juice (optional)
- Salt and pepper, to taste
- 2-3 tablespoons vegetable oil for frying
Instructions:

Prepare the salmon: Open the can of salmon and drain it well. Flake the salmon with a fork, removing any bones and skin.

Mix the ingredients: In a large bowl, combine the flaked salmon, breadcrumbs (or crackers), chopped onion, chopped bell pepper (if using), mayonnaise, egg, Dijon mustard (if using), garlic powder, lemon juice (optional), salt, and pepper. Mix everything together until well combined.

Form the patties: Take small portions of the mixture and shape them into round patties, about 2-3 inches in diameter.

Cook the patties: Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully place the patties into the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.

Drain and serve: Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
