BBQ Brisket Melts Recipe

Ingredients:

For the BBQ Brisket:

2 pounds of beef brisket
-
1 tablespoon olive oil
-
1 tablespoon salt
-
1 tablespoon black pepper
-
1 tablespoon garlic powder
-
1 tablespoon onion powder
-
1 tablespoon smoked paprika
-
1 cup BBQ sauce (preferably a smoky, tangy variety)
-

For the Melts:
-
8 slices of sourdough bread (or your favorite bread for sandwiches)
-
8 slices of cheddar cheese (or a cheese of your choice like Swiss or American)
-
4 tablespoons of butter (for grilling)
-
-
For Serving:
-
Pickles (optional, for garnish)
-
Fresh cilantro or parsley (optional, for garnish)

Instructions:
1. Prepare the Brisket:
-
Preheat your oven to 300°F (150°C).
-
Rub the brisket with olive oil, and then season it generously with salt, black pepper, garlic powder, onion powder, and smoked paprika. Make sure the brisket is evenly coated on all sides.

Place the brisket on a baking sheet or in a roasting pan and cover it tightly with aluminum foil.

Bake the brisket in the preheated oven for about 1 hour 15 minutes or until it becomes tender and the flavors are well infused. Once cooked, remove it from the oven and let it rest for 10-15 minutes before slicing.
2. Slice the Brisket:

Once the brisket has rested, slice it thinly against the grain. This will help in creating tender, melt-in-your-mouth slices perfect for sandwiches.
3. Toast the Bread:
-
While the brisket is resting, heat a large pan or griddle over medium heat. Butter one side of each slice of bread with 2 tablespoons of butter.

Place the buttered side of the bread onto the griddle and toast until golden brown and crispy. Flip the slices and toast the other side. Remove the bread and set it aside.
4. Assemble the BBQ Brisket Melts:

Place a slice of cheddar cheese on one side of each toasted bread slice.

Add a generous portion of the sliced BBQ brisket on top of the cheese.
-
Top with another slice of cheddar cheese to create a double cheese layer.

Close the sandwich with the second piece of toasted bread, buttered side out.
5. Grill the Melts:

In the same pan or griddle, lower the heat to medium-low and add the sandwiches.

Grill each side for about 3-4 minutes or until the cheese is melted and the bread is golden brown and crispy.

Flip the sandwiches carefully to avoid spilling any brisket and grill the other side until perfect.
6. Serve:

Once your BBQ Brisket Melts are done, cut them in half and serve them hot.

Optionally, garnish with a few pickles and fresh cilantro or parsley for an extra burst of flavor and color.
Tips:

You can prepare the brisket ahead of time and store it in the refrigerator for up to 3 days. Just reheat the slices before assembling the melts.

If you prefer a smoky kick, feel free to add some extra smoked paprika or even a dash of chipotle powder to the seasoning mix.

Try different types of cheese such as pepper jack or provolone for a unique twist on this classic sandwich.
