Ingredients
For the Crust:

1 ½ cups (about 150g) chocolate cookie crumbs (e.g., Oreo crumbs)

¼ cup (60g) unsalted butter, melted
For the Cheesecake Filling:

24 oz (680g) cream cheese, softened

1 cup (200g) granulated sugar

1 cup (240ml) sour cream, room temperature

4 large eggs, room temperature

¾ cup (180ml) Baileys Irish Cream

1 tbsp vanilla extract
-
2 tbsp all-purpose flour
-
½ cup (90g) semi-sweet chocolate chips, melted and slightly cooled
For the Topping:

1 cup (240ml) heavy whipping cream
-
2 tbsp powdered sugar
-
2 tbsp Baileys Irish Cream
-
Chocolate shavings or cocoa powder for garnish
Instructions
1. Prepare the Crust
-
Preheat your oven to 325°F (160°C).

Combine the chocolate cookie crumbs and melted butter in a bowl until evenly mixed.

Press the mixture firmly into the bottom of a 9-inch (23cm) springform pan.

Bake for 10 minutes, then set aside to cool.
2. Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth.

Add the sugar and mix until well combined.

Blend in the sour cream, followed by the eggs one at a time.

Stir in Baileys Irish Cream, vanilla extract, and flour.

Gently fold in the melted chocolate until fully incorporated.

Pour the filling over the cooled crust and smooth the top.
3. Bake the Cheesecake

Place the pan into a water bath (wrap the outside with foil to prevent leaks).

Bake for 55–65 minutes, or until the center is set but still slightly jiggly.

Turn off the oven, slightly crack the door, and let the cheesecake cool inside for 1 hour.

Remove from the oven, cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
4. Prepare the Topping

In a chilled bowl, beat the heavy cream, powdered sugar, and Baileys until soft peaks form.
