Ingredients

For the Crust:

Instructions

1. Prepare the Crust

  1. Preheat your oven to 325°F (160°C).

  2. Combine the chocolate cookie crumbs and melted butter in a bowl until evenly mixed.

  3. Press the mixture firmly into the bottom of a 9-inch (23cm) springform pan.

  4. Bake for 10 minutes, then set aside to cool.

2. Make the Cheesecake Filling

  1. In a large mixing bowl, beat the cream cheese until smooth.

  2. Add the sugar and mix until well combined.

  3. Blend in the sour cream, followed by the eggs one at a time.

  4. Stir in Baileys Irish Cream, vanilla extract, and flour.

3. Bake the Cheesecake

  1. Place the pan into a water bath (wrap the outside with foil to prevent leaks).
