Bacon-Wrapped Pork Tenderloin Recipe

Ingredients:

  • 1 pork tenderloin (about 1 lb / 450g)
  • 6-8 slices of bacon
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • 1 tsp dried thyme (or fresh thyme leaves)

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Prepare the pork tenderloin: Pat it dry with paper towels and trim any excess fat or silver skin.
  3. Season the meat: Rub the tenderloin with olive oil, minced garlic, salt, black pepper, paprika, and thyme.
  4. Wrap with bacon: Lay bacon slices slightly overlapping on a flat surface. Place the tenderloin on top and roll it tightly so that the bacon completely wraps around it.
  5. Secure the bacon: Use kitchen twine or toothpicks to keep the bacon in place if necessary.
  6. Brush with glaze: Mix Dijon mustard and honey (or maple syrup) in a small bowl, then brush it over the bacon-wrapped tenderloin.
  7. Bake: Place the wrapped tenderloin seam-side down on the baking sheet and bake for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  8. Broil for crispiness: Set the oven to broil for 2-3 minutes to crisp up the bacon.
  9. Rest and serve: Let the pork rest for 5 minutes before slicing. Serve warm with your favorite sides.
